Tom Yum
Tom Yum is a of the most famous dishes in Thai Cuisine. It is known for its distinct hot and sour flavours, with fragrant herbs generously used.In Thailand, TomYum is usually prepared with prawns, chicken, fish or mixed seafood and mushrooms. Commercial Tom Yum paste is made by crushing all the herb ingredients and stir-frying in oil. Seasoning and other perservative are included as well.
Tom Yum Goong
This is one of the many Tom Yum dishes in Thailand.It is made with prawns along with many other spices. The soup is usually added with fresh chopped coriander leaves as a topping at the end.
Ingredients
2 lbs shelled prawns
3 cups clear broth
1 inch pieces of lemon grass, 1 stalk lightly pounded
3 kaffir lime leaves
3 torn coriander roots
5 tomatoes(small)
1/2 cup canned mushrooms
4 tablespoons fish sauce
4 tablespoons lime juice
1 tablespoon coriander leaves
2 tablespoons toasted chili paste
5 lightly pounded small chilies
Directions
- Boil the clear broth and add the chopped lemon grass, kaffir lime leaves and coriander roots. Cover the pot until it begins to boil.
- Add the tomatoes, mushroom and fish sauce and leave to cook. Add he prawns, wait for the broth to boil, remove the pot from the heat.
- Put chili paste and lime juice into a bowl, spoon stir until mixed well, then add the small chilies. Pour the Tom Yum soup into the bowl and stir gently until well blended.
- At this point, if required add additional spices to taste. Sprinkle the coriander leaves and serve while hot
